HOW TO MAKE CUPID CUPCAKES

Store-bought cake mix has saved my bacon too many times. There are ways that you can easily adapt the box mix to have your cupcakes more fluffy or taste a little bit more homemade. Good vanilla, as Ina would say, is a perfect ingredient to add to your store-bought cupcake mix.

Add a teaspoon of the pink gel food coloring to your cake mix and stir. Use your ice cream scoop and scoop even amounts into the lined cupcake tin. Bake according to package instructions.

MAke your Cupid Cupcake Buttercream

Make your buttercream extra smooth by sifting your confectionary sugar beforehand. Getting the butter extra creamy and almost white before you add in your sugar can also drastically affect the taste of your buttercream in a good way.

When mixing your butter, you want to use unsalted butter and have it still be a bit cold. If you can press your finger into the side easily and it's still cold, that's perfect!

How to Create Your Candy Cupid's Arrow

Being by laying your pretzels on a lined baking sheet and melt your candy melts in a bottle or small bowl. I like to do 30-second intervals and melt it until you can barely see any of the chips left. If you've microwaved it straight to liquid then it will seize and be gritty.

You can use a piping bag but a Ziploc bag works just as well. Cut a small corner of the bag and then pipe out the V's of the arrows and set it aside to harden.

How to make Fondant Hearts

Make two balls of fondant about the size of Whopper or Malteser candy. You're going to sandwich them together and then form the point of the heart. It's pretty easy so just do what works best for you. Set them aside until your cupcakes are done cooling.

Making American Buttercream

Make your buttercream extra smooth by sifting your confectionary sugar beforehand. Getting the butter extra creamy and almost white before you add in your sugar can also drastically affect the taste of your buttercream in a good way.

American buttercream

Add your buttercream to a piping bag and pipe it onto your cooled cupcakes. Place the pretzel into the frosting with the V's facing up. Then you'll place your fondant heart at the base to create your Cupid Cupcakes.

Ingredients

Cupcake Mix

  • White cake mix + ingredients to make them
  • ¼ tsp pink gel food coloring

Buttercream Ingredients

  • ½ cup softened unsalted butter
  • 2 cups confectioners’ sugar
  • 1 tbsp milk

For the Decorations

  • 12 small pretzel sticks
  • ½ cup pink candy melts
  • 4-5 oz. red rolling fondant

Instructions

  • Mix cake batter according to the box’s directions. Add gel food coloring and mix until batter is completely tinted.
  • Scoop into a muffin tin, lined with paper liners and bake according to the package’s directions.
  • Allow to cool completely before baking.
  • While the cupcakes cool, prepare the buttercream: In a large bowl, beat together butter, confectioners’ sugar and milk with an electric mixer. Start on low and gradually increase to high.
  • Once the ingredients are well-combined and form semi-stiff peaks, scoop into a piping bag with Wilton tip #21 attached.
  • Frost each cupcake.
  • Line a pan with wax paper. Knead rolling fondant until smooth.
  • Roll 24 fondant spheres, about one inch in size each.
  • To create a heart, press the bottom two fondant spheres together, pointing it at the end. Repeat to create 12 fondant hearts and set aside on half of the wax-paper-lined pan.
  • Line up 12 pretzel sticks on lined pan. In a small bowl, microwave pink candy melts in 30-second intervals, stirring between each interval.
