I'm incredibly lucky to get to guest post on some of my favorite blogs and one of them is Made From Pinterest. They take inspiration from Pinterest and create crafts, recipes and everything in between. I made these delicious Mini Icebox Lemon Pies a few weeks ago and it was too good not to share with you! All it takes is 4 ingredients and a little patience, that's the worst part of this whole thing.
Supplies
- 1 pkg of 6 mini graham cracker crust premade pie shells (Keebler)
- 3 lemon flavored yogurt (I prefer Yoplait)
- Whipped Cream
- Sugar
Take the mini graham cracker pie shells and place them on a baking sheet to make them easy to transfer later. Now take your yogurts and use half of the container in each of the crusts. Don't be stingy, scrape all the goodness out of there!
Transfer it to the freezer and allow it to set up for at least 2 hours. You can have them sit overnight if you wanted to but have them soften for about 30 minutes before you serve if you're going to freeze them for that long.
I like to buy the whipping cream in the container and whip it in my KitchenAid stand mixer with about a 1/4 cup of sugar. If you don't have one of those or just want to save some time, grab some Reddi Whip. We're not kidding ourselves when we try not to act like we don't squirt a little in our mouths once in a while. Just some do it more that others…
This is so much fun to try in different flavors of yogurt and really great for a summer snack. I remember when I was young that a babysitter made a 9″ version of this with strawberry yogurts and it tasting so good. You definitely have the opportunity to make it a lot lighter and healthier with Greek yogurt too. Good luck and I hope you enjoy!
