Supplies Needed:
- Heavy Bottom Saucepan
- Candy Thermometer
- Wax or Parchment Paper
- Knife and Food Scissors
- Non-Stick Spray
- 13″x9″ Casserole Pan
This is another one of my Grandma's recipes that is a go to for my family. I'm really fortunate to have my sweet Grandma so close to me. She's pretty funny and fun. She's always making jokes and singing songs to us. I always remember as a child being able to go to the side of her house and pick raspberries and then she'd make us raspberries and cream. Those are the kind of memories I hope to pass on but for now, its blogging and I've got a permanent journal online!
Recipe
Serves 24
Ingredients:
2 Cups Sugar,
1 1/2 Cups Dark Corn Syrup,
1/2 lb. Butter,
1/2 Pint Cream,
2 tsp Vanilla Extract,
Fleur De Sel (French Salt),
Instructions:
Combine the sugar, corn syrup and butter in a saucepan and bring to a boil up until 234 degrees. Boil for 5 minutes, keeping the temperature the same. Remove from heat and add your cream, vanilla and a pinch of fleur de sel. Mix well and pour into lined and greased casserole pan.
*I live in Utah, which is high altitude – the temperature that is ideal to heat to is 234 degrees. When we lived in Portland, closer to sea level – we found a temperature of 242 degrees was ideal. You want to heat it so that it will have a consistency of a soft ball. Another good way to check is put your hot sugar in a glass of cold water, scoop it out and taste it that way.
This was also my first time making caramel by myself so there were some tricks I learned. I poured my caramel into a half sheet pan and they were just too thin, so I'd recommend using a casserole pan. Also, line that pan with some wax or parchment paper that has been sprayed with non-stick spray. Once your caramel have come to temperature, pour the mixture into the pan and let it cool in the fridge uncovered. Leave it in there about 2-3 hours and then after that, you can pull it out and lift your caramel straight out. Sprinkle with the Fleur De Sel and use your scissors to now cut up your caramel into squares.
I'm going to be using this for neighbor gifts this year. I grabbed these empty paint gift jars from The Container Store but you can also grab them from Michaels. Tie with a cute ribbon and a gift tag and it's one of the least expensive gifts you'll ever give!
